Born in the U.K. and finessed in Vancouver, modern Indian cuisine has found a happy home in Toronto. Think alpha ingredients, à la minute cooking, textural variety and subtle spicing. Here are the city’s top places to taste the difference

1. Amaya sets the new Indian standard. Fabulous naan, perhaps the city’s finest, is best used to mop up the rich saffron sauce surrounding a lightweight biryani. Inventive cocktails further revolutionize the cuisine.

2. Bread Bar is Amaya’s more relaxed sib, luring Lawrence Park to its communal table with an original list of small dishes. A $45 tasting menu (a bargain for three apps, four mains, bread, rice and dessert) helps the indecisive, but savvy diners know to order the lobster and spiced mashed potato naanini sandwich.

3. At Indus Junction, subcontinental flavours are immersed in a Canadian context. Steak is grilled, rather than endlessly braised, and then dressed with a mild vindaloo sauce. And while the malai kofta dumplings are classically spiced, they are far lighter than the North Indian norm. Intriguing cocktails and low prices suit the Queen West crowd.

4. Debu’s gives owner-chef Debu Saha a canvas for complex fusion dishes that look French and taste Indian. There’s plenty for vegetarians (a triptych of cauliflower in a citrus- almond sauce, for instance), but juicy tandoori quail is the big thrill.
